Sayeed's Marvelous Mango Upside-Down Cake (aka: Pineapple's Tropical Cousin)

 

If you know me, you know I love being in the kitchen just as much as I love designing them. There's something about cooking for the people you love that grounds you - it's the same reason I care so much about how kitchens are built to actually be lived in. This is one of my favorite summer recipes to enjoy in yours.

 

Ingredients

For the Glaze and Topping:

  • 1/4 cup melted European butter

  • 1/2 cup light brown sugar

  • 2 small mangos, diced

For the Cake:

  • 1 3/4 cups all-purpose flour

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 1/2 cup softened European butter

  • 3/4 cup white granulated sugar

  • 2 eggs

  • 1/2 cup mango juice

 

Directions

  1. Preheat your oven to 350°F (177°C).

  2. Melt the butter and brown sugar together in a bowl and whisk until smooth and silky. Spread it evenly into the bottom of a 9-inch cake pan — this is your golden, gooey magic layer. No need to grease the pan first; this layer does all the work for you.

  3. Scatter the diced mango evenly over the caramel layer — no need to arrange anything fancy, just an even, generous spread across the pan.

  4. In a separate bowl, add the softened butter and sugar. Grab your hand mixer and blend until light, fluffy, and irresistibly creamy — about 2 minutes.

  5. Add the eggs and mix again. Pour in the mango juice and blend until fully combined.

  6. Sift in the flour, baking powder, and salt. Mix on low just until the batter is smooth and lump-free — no need to overdo it, we want tender, not tough.

  7. Pour the batter over your mango layer and smooth it out with a spatula. Set the pan on a baking tray (trust me, things bubble over).

  8. Bake for 30 minutes, or until a toothpick comes out clean.

  9. Run a knife around the edges, place a plate over the top, and flip it in one confident motion. Give it a few taps, lift the pan, and reveal all that jammy, caramelized mango peeking through.

  10. Slice, serve, and enjoy every golden, mango-soaked bite.

This makes one gorgeous 9-inch cake — perfect for brunch, birthdays, or any day you want your kitchen to smell like the tropics.

A note on the mangoes: Ripe but firm mangoes dice the cleanest. If they're too soft, they'll turn to mush on the flip — and nobody wants a mango massacre.

A note on the pan: No need to grease it! That buttery brown sugar layer on the bottom (which becomes the glossy top once flipped) does all the work — it keeps everything moist and releases beautifully on its own.
